When I first transitioned to a vegetarian diet, my family was very concerned about my protein intake. My dad in particular would incorporate protein powders, tofu, faux meats, etc. wherever he could; even in desserts. My favorite desserts were his baked chocolate tofu pies! I literally still have dreams about them- they are that good!
When the weather gets hot, I love a nice cool salad. They’re easy to throw together with whatever fresh veggies you have on hand. Caesars have always been a favorite of mine. Greens, a protein, and dressing are all you really need. This recipe may look odd- but I promise it all comes together wonderfully! Trust me! It is super delicious and tastes just like the real deal.
One of my favorite breakfasts has always been a toasted bagel with cream cheese. As I transitioned to a vegan diet, I worried that this might be a pleasure I would have to give up. I have tried store-bought vegan cream cheeses, but never found one I loved. Either the texture or the taste was off and I could never find my favorite “specialty” flavors. Not only that, but these cream cheeses were expensive!! I decided I had to make my own.
It is starting to look like spring here in North Carolina! There is something about a warm sunny day that leaves me craving a fruity, sweet dessert. This Mojito Sweet Bread has such a fun, refreshing flavor. It’s loaded with both lime juice and zest as well as plenty of fresh mint leaves. With or without icing, this bread is perfect to pair with a glass of iced tea, lemonade, or maybe something a little more “adult”!
These granola bars are a perfect breakfast or snack when you’re on the go. I have found myself with very limited free time this holiday season between work, travel, and shopping for Christmas presents! I am not a pleasant person when I’m hangry, but these bars have saved me on many occasions! These soft, chewy granola bars are full of seasonal flavors and are wonderful when eaten warm or cold. They are also very customizable.
