To be honest, the only thing I “miss” being a vegan is shellfish. Growing up on the coast of Maine, we ate lots of seafood! The summer time was meant for grilled fish, fried fisherman’s platters, and crab cakes. These jackfruit “crab” cakes mimic the real thing pretty darn close, though. I’m convinced that my seafood loving father could be tricked into thinking these are the real thing (well, at least 90% convinced).

I love making homemade veggie burgers because they are so easy and versatile! This classic black bean burger is no exception. Spicing is the key to taking this burger from boring to bold. If you’re not afraid of spice, don’t be afraid to add a little extra chili pepper or some jalapenos! If you want to keep it simple, toss these burgers on a salad or a bun with a little ketchup.

While we’re isolating at home, I have been working to recreate some of our favorite restaurant dishes. Pad thai is one of my boyfriend’s go-to dishes. I asked him why he loves this dish and this is how he answered: “It’s delicious!” While that’s not really the answer I was looking for, it’s true! I like this dish because it’s a little sweet, salty, and spicy. Quite honestly, though, anything with peanut butter I’ll love.

When the weather gets hot, I love a nice cool salad. They’re easy to throw together with whatever fresh veggies you have on hand. Caesars have always been a favorite of mine. Greens, a protein, and dressing are all you really need.  This recipe may look odd- but I promise it all comes together wonderfully! Trust me! It is super delicious and tastes just like the real deal.
