I love making homemade veggie burgers because they are so easy and versatile! This classic black bean burger is no exception. Spicing is the key to taking this burger from boring to bold. If you’re not afraid of spice, don’t be afraid to add a little extra chili pepper or some jalapenos! If you want to keep it simple, toss these burgers on a salad or a bun with a little ketchup. We opted for a truly loaded black bean burger- complete with lettuce, tomato, onion, jalapenos, avocado and queso! It was a lot, but sooo worth the extra assembly! Ingredients: 

1 Medium Red Pepper, diced 

1 Medium Red Onion, diced

2 tbsp Olive Oil

2 15.5 oz cans Black Beans

2 cups Cooked Brown Rice

2 tsp Adobo All-purpose Seasoning

2 tsp Chili Powder

1 tsp Paprika

1 tsp Garlic Powder

½ tsp Cumin

½ tsp Ground Pepper

 

Directions:

  1. Preheat oven to 375℉. Line a baking sheet with parchment paper. 
  2. Heat olive oil in a frying pan over medium heat. 
  3. Saute red pepper and onion until fragrant and tender, about 7 minutes.
  4. Drain and rinse black beans in a small colander.
  5. Add half of the black beans and sauteed red pepper and onion to a food processor. Blend until smooth. 
  6. Add this mixture to a large bowl.
  7. Add the rest of the black beans, cooked brown rice, and spices to the bowl and mix well.
  8. Lightly spray a ⅓ cup measuring cup with cooking spray. Use this measuring cup to scoop black bean burger mixture onto the parchment paper. Gently press the mixture down to make burger patties, about ½ inch thick.
  9. Bake for 40-45 minutes, flipping burgers half way through.
