Apple Cider Donuts
One of my favorite fall activities is apple picking. I love walking through the rows of trees and picking fresh Macintosh apples until my bag is so full and heavy that it feels like my arms might break! That’s usually my queue to eat one.. ya know.. to lighten the load. However, a day of apple picking would not be complete without apple cider donuts! They are the perfect fall treat; perfectly sweet and spiced.
S'mores Cookies
The weather has started to cool down here in North Carolina and I have been desperately wanting to make s’mores. However, we do not currently have a fire pit! I have been forced to improvise, but am so happy that I did! These cookies are the perfect treat for a cool night or a socially distanced patio dinner with friends. They are soft and buttery, but with all the campfire goodness!
These sesame ginger dumplings are the definition of comfort food. These dumplings get their soft centers from shredded carrots, shiitake mushrooms, and tofu. In this recipe, I prefer to use Nasoya’s Sesame Ginger TofuBaked. I’ve found that I get a much more consistent texture than when I press and bake my own tofu (something I’ve been working on perfecting).
I’m pretty sure that this recipe makes me an official southerner. Chicken and waffles is such a classic dish here in North Carolina. This dish will impress vegans and meat eaters alike. Serve it to guests for breakfast, lunch, or dinner! This recipe makes 4 crispy "chik'n" seitan cutlets and 4 cornbread waffles!
