Walnut Taco "Meat"
I know what you’re thinking- walnut "meat" sounds kinda crazy. Don’t be fooled though! This recipe is perfect for making beef-less tacos. After soaking your walnuts for 2-4 hrs in warm water, the walnuts soften to create a perfect meat-like texture. Throw them in a food processor with plenty of taco seasonings, pulse for a few seconds, and viola! You’ve got the perfect filling for your Taco Tuesday dinner!
Does anyone else forget how easy it is to make hummus? It always sounds like so much work, but realistically it takes only 5 minutes! I like to cook a bag of chickpeas and make a few different flavors at once. My personal favorite is the lemon spinach hummus. It’s perfect on a sandwich or with sweet potato chips!
