Pumpkin spice granola bars

These granola bars are a perfect breakfast or snack when you’re on the go. I have found myself with very limited free time this holiday season between work, travel, and shopping for Christmas presents! I am not a pleasant person when I’m hangry, but these bars have saved me on many occasions! These soft, chewy granola bars are full of seasonal flavors and are wonderful when eaten warm or cold. They are also very customizable. Sub in applesauce for pumpkin puree or pecans for walnuts! Let me know what combinations you’ve tried in the comments below.

Cook Time: 20 mins

Difficulty: Easy

 

Ingredients:

2 ½ cups Old Fashioned Oats

¾ cup Sunflower Seeds

¾ cup Walnuts

½ cup Raisins

1 cup Pumpkin Puree

⅓ cup Maple Syrup

1 ½ tsp Pumpkin Pie Spice

1 tsp Cinnamon

¾ tsp Vanilla Extract

 

Directions:

  1. Preheat oven to 350℉. Line a baking pan with parchment paper.
  2. In a large bowl, mix together all ingredients.
  3. Spread mixture on parchment paper, making a large square about 1” thick. Note: If you like a crunchier granola bar, spread the mixture thinner and reduce the cooking time. 
  4. Bake the granola mixture for 20 minutes. Pull from the oven and cool. Once cool, cut the granola into 9 bars.
