It has been so long since I’ve had a Boston Cream donut! They have been and will forever be my favorite type of donut. I was honestly so afraid to “veganize” these donuts because I knew I would be disappointed if they didn’t taste like the real thing. These donuts are definitely labor-intensive, but so worth the effort!

To be honest, the only thing I “miss” being a vegan is shellfish. Growing up on the coast of Maine, we ate lots of seafood! The summer time was meant for grilled fish, fried fisherman’s platters, and crab cakes. These jackfruit “crab” cakes mimic the real thing pretty darn close, though. I’m convinced that my seafood loving father could be tricked into thinking these are the real thing (well, at least 90% convinced).

I am obsessed with this “chik’n” salad recipe. In the last four days, I have made this recipe twice! It is so simple, but so flavorful! Not to mention, no cooking! I am currently avoiding any and all oven recipes to try to get through this summer heat. It’s perfect for picnic sandwiches or topping salad greens. This recipe is also great for meal prepping.

There are few things better than a chewy chocolate chip cookie when you’re in the mood for something sweet. The edges of these cookies are perfectly crisp, but the centers are still chewy and soft. The key is letting these cookies chill in the fridge for at least 4 hours (preferably overnight).
