Caramelized Banana Pudding

This fun twist on a classic southern dessert is perfect for warm summer days. This caramelized banana pudding has a depth of flavor that is incomparable. 2 cup Soy Milk

¼ cup Sugar

1 tbsp Vanilla Extract


¼ cup Corn Starch

¼ cup Water


2 tbsp Lemon Juice


Caramelized Bananas:

¼ cup Vegan Butter

4 Bananas

¼ cup Brown Sugar Packed

½ tsp Cinnamon


1  8.8 oz package Biscoff Cookies, crushed

Vegan Caramel (optional)




  1. Add soy milk, sugar, and vanilla extract to a small saucepan over low to medium heat.
  2. In a small bowl, mix cornstarch and water to create a slurry.
  3. Add cornstarch mixture and lemon juice to the saucepan.
  4. Bring to a low, gentle boil while stirring continuously. 
  5. Once the custard has thickened, pull off the heat. 
  6. Move the custard to the fridge to cool.


Caramelized Bananas:

  1. In a medium sized frying pan, melt butter over low to medium heat. 
  2. Slice bananas about ½ inch thick. *Please note that your bananas will break down if you cut them too thin.*
  3. Sprinkle brown sugar and cinnamon over bananas. Flip the bananas and stir to ensure they are covered evenly.
  4. Turn the heat down to low and allow the bananas to cook for about 10 minutes. 
  5. Move the caramelized bananas to the fridge to cool.


Assemble Banana Pudding:

  1. In 8  small cups or a trifle bowl, layer custard followed by crushed biscoff cookies and caramelized bananas.
  2. Repeat these layers of custard, cookies, and caramelized bananas creating at least two layers. Top with caramel drizzle if desired.
